Minced Beef Spaghetti Jollof

This is a Nigerian take on pasta. The fundamentals of this recipe is always the same but we can add in different protein sources. This recipe is taken from Nazormscorner.com and i’ll be modifying the authors recipe so you can eat it too.

Author's Ingredients (serves 5-6)

  • 250g mince meat
  • 1 bulb onion ( chopped)
  • 1 garlic clove (minced)
  • 2 green peppers (chopped)
  • 2 small carrots (chopped)
  • 5-6 medium tomatoes,
  • 5 long chilli peppers and 3 scotch bonnet, 1 garlic clove,  (cooked on medium heat for 15 minutes then blended into a paste)
  • 2/3 of a pack of Spaghetti
  • Thyme, Oregano,
  • Tumeric powder
  • 2 Seasoning Cubes
  • Salt to taste
  • 3 tbsp olive or coconut oil

Author's Instructions

  1. Boil your pasta in salted water till almost done then set aside. This will take about 7 minutes.
  2. On medium heat, in a deep frying pan, add  the oil and fry most of the onions and  minced garlic clove till fragrant.
  3. Add  the  mince meat  and fry for about a minute or two while making sure its broken down into bite size pieces.
  4. Season the meat with half of your stock cube, thyme, salt, tumeric powder, and give it a good stir. Let it cook till all the liquid is completely dried out and the meat is starting to get a little bit crunchy around the edges of the pan.
  5. Add the base made from the cooked then blended peppers and tomato. Add a bit of the carrots and chopped onions and garlic. 
  6. Season with the remaining stock cube, and oregano. Add about 1/2 cup of water or chicken stock.
  7. Stir in your cooked pasta and adjust salt to taste.
  8. Add the remaining chopped vegetables including carrots, bell peppers, cabbage or any other vegetables you have.
  9. Let it steam for 1 minute as you stir to combine well, then turn off the heat and serve!

  • 80g of cooked beef mince OR 96g of raw beef mince
  • 60g of spaghetti (raw weight)
  • 1 teaspoon of olive oil OR cooking spray
  • Onion, garlic, green peppers, small carrots, tomatoes, chilli peppers, thyme, oregano, tumeric, seasoning cubes, salt and pepper to taste.
  • 90g of cooked beef mince OR 108g of raw beef mince
  • 70g of spaghetti (raw weight)
  • 1 teaspoon of olive oil OR cooking spray
  • Onion, garlic, green peppers, small carrots, tomatoes, chilli peppers, thyme, oregano, tumeric, seasoning cubes, salt and pepper to taste.
  • 100g of cooked white rice OR 120g of cooked brown rice
  • 80g of cooked beef mince
  • 6 tsp of brown sugar
  • 6 tsp of light soy sauce
  • 1.5 tsp of sesame oil
  • 1/2 teaspoon crushed red-pepper flakes, or more to taste
  • 1/4 teaspoon ground ginger
  • 1 clove of garlic, minced
  • 1 green onions, thinly sliced
  • 1/4 teaspoon sesame seeds
  • 110g of cooked beef mince OR 132g of raw beef mince
  • 90g of spaghetti (raw weight)
  • 1 teaspoon of olive oil OR cooking spray
  • Onion, garlic, green peppers, small carrots, tomatoes, chilli peppers, thyme, oregano, tumeric, seasoning cubes, salt and pepper to taste.
  • 120g of cooked beef mince OR 144g of raw beef mince
  • 100g of spaghetti (raw weight)
  • 1 teaspoon of olive oil OR cooking spray
  • Onion, garlic, green peppers, small carrots, tomatoes, chilli peppers, thyme, oregano, tumeric, seasoning cubes, salt and pepper to taste.
  • 130g of cooked beef mince OR 156g of raw beef mince
  • 110g of spaghetti (raw weight)
  • 1 teaspoon of olive oil OR cooking spray
  • Onion, garlic, green peppers, small carrots, tomatoes, chilli peppers, thyme, oregano, tumeric, seasoning cubes, salt and pepper to taste.

My Thoughts

The main ingredients you need to watch out for is the beef mince, oil and pasta. Make sure you use oil spray to coat the pan.

I recommend you have lean beef mince 1-2 times per week.

Overall, this is a very good and well balanced meal.
