Wasabi Mayo Beef Tacos

Ingredients

For the Mayonnaise:

  • Wasabi paste
  • Light Mayonaise
  • Red hot chili, sliced thinly
  • Chives
  • Salt

For the taco seasoning mix:

  • 1.5 teaspoons smoked paprika
  • 1.5 teaspoons ancho chile powder
  • 1.5 teaspoons chili powder
  • 1.5 teaspoons cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon thyme
  • 1/4 teaspoon cayenne pepper

For the slaw:

  • Cabbage
  • Carrots, peeled and grated
  • ½ bunch green onions, finely sliced
  • Zest of half a lime
  • Juice of half a lime
  • Salt
  • Freshly cracked pepper
The quantities for beef mince and the wrap/taco selection will be provided in the breakdown below.

Instructions

  1. Heat up a pan with some cooking spray and begin to cook the beef mince with the taco seasoning mix. Add more or less of the seasoning mix depending on the taste.
  2. While the beef mince is cooking, mix in the wasabi and light mayonnaise paste together. The exact mayonnaise amount will be provided below but use any amount of wasabi you prefer. Mix in the hot chili, chives and then season with salt.
  3. Finely chop the cabbage, green onions and the carrots and mix in together with some lime zest and juice. Don’t forget to season.
  4. Toast some tortillas/tacos directly over the burner flame for 10 seconds each side or until they get a little charred.
  5. Assemble and serve.

My Thoughts

The main ingredients you need to watch out for are the wraps, mayo and beef mince. Make sure you use oil spray to coat the pan. There isn’t many ingredients in this recipe that you need to track so feel free to add in more vegetables, spices and herbs.

This will be one of the lowest calorie choices for the wrap and taco section. Remember, you can add on low calorie sauces if you want more flavour.

I recommend you have lean beef mince 1-2 times per week.
